  • 2 tbsp olive oil

  • 1 small white onion, finely diced

  • 2 cloves garlic, finely diced

  • 1 heaped tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp ground coriander

  • 1 tsp tomato paste

  • 1-2 tsp adobo paste (or chilli paste)

  • 2-3 tbsp soy sauce or tamari (for GF version)

  • 60 ml / ¼ cup stock (or water)

  • 1 tbsp maple syrup

  • a good pinch white or black pepper
