Grilled Salmon with Cauliflower Rice Stir-Fry and Bok Choy with Soy Sauce and Butter
My neighbor was giving away free vegetables and bok choy was among them so I decided to try this bok choy recipe. I added cauliflower rice to it and brown rice as well and served salmon on top of it. I buy the frozen salmon at Costco and let it thaw for a few hours before using it. The frozen cauliflower rice can also be found at Costco. Cheap, easy, fast, healthy, delicious.
Ingredients
For salmon:
2 pieces of salmon
Tajin seasoning
For bok choy:
Few heads of bok choy, chopped
2 Tbsp water
2 tsp soy sauce
1 tsp sesame oil
1 Tbsp oyster sauce
What To Do
Combine water, soy sauce, sesame oil, and oyster sauce and set aside.
Sprinkle Tajin on salmon (I don’t put any oil on the salmon).
Heat wok or heavy frying pan until very hot, about 1-2 minutes, then add oil and heat about 30 seconds more.
Add bok choy and salt and stir-fry for 2 minutes. In the meantime, heat up a gas grill to high.
Add soy sauce mixture and butter and stir fry 1-2 minutes more, until bok choy is still slightly crisp, but getting tender. Set aside in a separate bowl.
Heat a little more peanut oil up then add cauliflower rice and sautee until heated through - about 5-7 minutes. In the meantime, grill salmon for 2 minutes on each side (or pan sear).
Add bok choy in with cauliflower rice. Let heat through for 3-5 minutes.
Serve hot, sprinkled with toasted sesame seeds if desired.
