This is my version of a few granola recipes combined. I love fennel and it works so perfectly in granola.
INGREDIENTS
⅓ cup pine nuts
⅓ cup raw sunflower seeds
¼ cup slivered almonds
1/2 cup chopped raw cashews
2 tablespoon sesame seeds
1/4 cup pumpkin seeds
2 teaspoons fennel seeds
1 1/2 tsp ground ginger
1/2 tsp ground cinnamon
½ teaspoon finely grated orange zest
1/2 cup coconut flakes
1 tbsp apple cider vinegar
1/4 cup maple syrup
1/4 cup coconut oil
2 cups old-fashioned oats
1 cup Bob’s Red Mill Buckwheat Groats (you can omit if you can’t find but they add a nice crunch)
½ teaspoon kosher salt
1/3 cup dried apricots, chopped
1/3 cup sweetened dried cranberries, chopped
RECIPE PREPARATION
In a large bowl mix together dry ingredients.
In another bowl whisk vinegar, maple syrup, coconut oil and drizzle over oat mixture.
Gently mix to coat evenly and spread out on a prepared baking sheet lined with parchment paper in a single layer - let sit for 20 minutes (this lets them absorb flavors)
Bake until oats are golden brown and crispy, 20-25 minutes, stirring every 10 minutes.
Remove from oven and place baking sheet on a cooling rack to cool completely. Store in an airtight container.
