Fennel Honey Granola

This is my version of a few granola recipes combined. I love fennel and it works so perfectly in granola.

INGREDIENTS

  • ⅓ cup pine nuts

  • ⅓ cup raw sunflower seeds

  • ¼ cup slivered almonds

  • 1/2 cup chopped raw cashews

  • 2 tablespoon sesame seeds

  • 1/4 cup pumpkin seeds

  • 2 teaspoons fennel seeds

  • 1 1/2 tsp ground ginger

  • 1/2 tsp ground cinnamon

  • ½ teaspoon finely grated orange zest

  • 1/2 cup coconut flakes

  • 1 tbsp apple cider vinegar

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

  • 2 cups old-fashioned oats

  • 1 cup Bob’s Red Mill Buckwheat Groats (you can omit if you can’t find but they add a nice crunch)

  • ½ teaspoon kosher salt

  • 1/3 cup dried apricots, chopped

  • 1/3 cup sweetened dried cranberries, chopped

RECIPE PREPARATION

  • In a large bowl mix together dry ingredients.

  • In another bowl whisk vinegar, maple syrup, coconut oil and drizzle over oat mixture.

  • Gently mix to coat evenly and spread out on a prepared baking sheet lined with parchment paper in a single layer - let sit for 20 minutes (this lets them absorb flavors)

  • Bake until oats are golden brown and crispy, 20-25 minutes, stirring every 10 minutes.

  • Remove from oven and place baking sheet on a cooling rack to cool completely. Store in an airtight container.
