Salt Free Vegetable Noodle Soup

This is a big batch - it made 21 cups of soup or so. You can cut it in half or freeze the extras.

Ingredients

2 onions

6 cups broccoli

4.5 cups chopped carrots

4.5 cups chopped celery

6 cloves garlic, chopped

21 cups vegetable broth

1 Tbsp oregano

Your favorite noodle - I like Banza chickpea noodles

Optional add salt or miso paste

What To Do

In large pot add some avocado oil and saute broccoli for a few minutes. Add onion, carrot, celery. After veggies start get soft, add garlic and stir for about a minute until fragrant. Add oregano and stir. Add the vegetable broth. Cover and let simmer for 30 minutes. Turn heat off as it will continue to cook.

Cook noodles separately and rinse with water so they stop cooking. Whenever you want to eat soup, put noodles in a bowl then top with soup.
