Kimchi Turkey Burgers
Holy kimchi! These are surprisingly delicious. I’m not one to pick up ground turkey meat on the reg so this was different for me. To be honest I didn’t know how these would turn out but they were delicious and I’ll be making them again. I got the original recipe from Gwenyth Paltrow’s book “Goop Clean Beauty” and put Sahara Rose’s “Plant-Based Pesto” on top from her “eat feel fresh” cookbook. I doubled the original recipe because I wanted leftovers (below is the recipe I actually made). To me this is the only logical way to cook with a busy schedule.
Ingredients
1/2 cup packed kimchi, liquid squeeze out and finely chopped
1 cup grated carrot or 1 large carrot grated
Few Tbsp diced red onion
2 Tbsp tamari
2 cloves garlic, minced
1 lb ground turkey meat
Lettuce leaves
What To Do
Place kimchi and red onion in a medium bowl and add tamari, carrot, garlic, and turkey. Use your hands to mix well, then divide into 4 equal patties. You can make these a day in advance and refrigerate, covered until ready to use.
To cook, heat grill on medium-high. Brush pan with oil and grill burgers for about 3 minutes per side or until very firm to the touch.
Serve burgers on lettuce leaves with pesto, avocado, or any choice of condiment.
