Spiralized Sweet Potato with Italian Sausage and Brussel Sprouts

Inspired by Inspiralized’s recipe found here, this recipe was so delicious and easy. You can meal prep ahead by spiralizing the sweet potatoes and cleaning/cutting brussels. I used purple brussel sprouts in this recipe but the regular ones are just as good.

Ingredients

2 cups brussel sprouts, washed and ends cut off or halfed/quartered depending how big they are

4 hot Italian sausage links

4 medium sweet potatoes, spiralized

Handful of cheddar/mozzerella cheese

What To Do

Heat an oven to 425* and grill to medium-high. Roast sweet potato noodles for 20-25 minutes until cooked through, turning halfway.

Meanwhile, cook sausages and brussel sprouts on grill. I like to use a grill basket for veggies - let them cook over flame for 10 minutes until slightly charred then wrap in tin foil and finish cooking for 20 minutes. Cook sausage on top rack of grill until done.

Put everything in a glass baking dish and top with cheese then broil to melt.
