Green Bean and Tomato Salad
I love getting this green bean and cherry tomato salad at Whole Foods so I decided to make my own. Original recipe can be found here. The only thing I altered was I used red onion instead of shallots and I steamed green beans instead of boiling them.
INGREDIENTS
1 pound string beans
handful of cherry tomatoes
1 tablespoon Dijon mustard
2 tablespoons red-wine vinegar
4 tablespoons finely chopped red onion
1 tablespoon finely chopped garlic
4 tablespoons olive oil
Salt and freshly ground pepper
4 tablespoons coarsely chopped basil
What To Do
Trim ends of beans and leave them whole.
Steam greenbeans in a steam basket over simmering water for 5 minutes. Drain and let cool.
In a salad bowl, add mustard, vinegar, red onion, garlic, oil, salt and pepper and blend with a wire whisk. Add beans and tomatoes, toss well. Sprinkle with basil.
