Sous-vide Poached Eggs, Roasted Veggies, Couscous with Chimichurri

This was last night’s dinner now turned into delicious breakfast. I heated water with Sous Vide to 167* and then placed eggs in water for 12 minutes. Then insert into ice bath so they stop cooking. I simply microwaved to reheat them.

Ingredients

Eggs

Ian’s Chimichurri Sauce

Cooked couscous or other grain

Roasted veggies - I had combination of turnips, broccoli, brussel sprouts

What To Do

Heat sous vide to 167* and place eggs in and cook for 12 minutes. After 12 minutes place eggs in ice bath. Heat other ingredients in bowl in microwave and for last 30 seconds of cooking add cracked eggs on top and reheat in microwave.
