Dandelion Greens and Egg Sandwich

Jay brought in a bunch of dandelion greens from our yard. I was skeptical at first as their smell was super earthy and when they were raw they were slightly bitter. Nothing some boiling and olive oil and garlic couldn’t fix :)

Ingredients

Dandelion greens

1 clove garlic, minced

Eggs

Salt, pepper, red pepper flakes

Gluten free (or any kind you want) everything bagel. I like Trader Joe’s

What To Do

Boil dandelion greens in water for 10 minutes. Strain and run cool water over to stop cooking. Try to let as much moisture strain as possible - you can even use a paper towel at end to soak up some.

Heat up olive oil on skillet, add garlic until fragrant. Chop the cooled dandelion greens and then put in pan. Season with salt, pepper, pepper flakes and saute for 5-10 minutes.

Meanwhile, cook up some eggs over low heat stirring every once in a while.

Toast your bagel. Then smear some cream cheese on it, top with cooked eggs and sauteed greens.
