Ingredients
3 eggs
1 cup espresso or strong coffee, cooled (cold brew)
1/2 cup sugar (I used raw)
2 Tbsp brandy or cognac
8 oz Mascarpone OR 4 oz mascarpone and 4 oz cream cheese
2 Tbsp cocoa
Package of lady fingers (20)
What To Do
Combine 3 egg yolks, 1 tbsp espresso, sugar, and brandy. Beat in standing mixer 3 minutes. Add Mascarpone and beat 3-5 minutes until smooth.
In another bowl combine 3 egg whites and a pinch fo sugar. Beat until stiff peaks form. Gently fold into Mascarpone mixture.
Quickly dip each ladyfinger into espresso and layer on bottom fo small serving dish. Spread Mascarpone mixture and sprinkle with cocoa. Refrigerate at least 1 hr before serving.
