My Dairy Free Version of Nektar's Pumpkin Immunity Bowl

These portions make a decent sized bowl. To premake, combine/whisk everything except frozen banana and toppings and keep in fridge. When you’re ready to make, put it in nutribullet with the frozen banana. Blend and add toppings.

Ingredients

1/2 frozen banana

1/3 cup pumpkin puree

1/2 cup dairy free yogurt (I like Forager’s vanilla cashew yogurt). Try 1/4 cup if you want a thicker smoothie.

1/4 cup almond milk

1 Tbsp sun butter or your favorite nut butter (almond would be good)

1 Tbsp maple syrup or 1 tsp honey

3/4 tsp pumpkin spice (if you don’t have any, combine 2 Tbsp cinnamon, 2 tsp ground ginger, 1 tsp cloves, 1/2 tsp nutmeg)

Few cubes ice (optional)

Toppings:

Granola (I like purely elizabeth chocolate sea salt)

Honeycrisp apples, diced

Unsweetened coconut flakes

Pepitas

Dash himalayan salt and cinnamon

What To Do

Blend all ingredients except toppings in nutribullet. Pour into bowl, top with toppings.
