Green Shakshuka with Broccoli Rabe
2 Tbsp coconut oil
1 medium onion diced (or 2 large leeks, thinly sliced)
1 bunch broccoli rabe (or kale)
1 tsp caraway seeds
1/2 tsp sea salt
1/4 tsp chili falkes
3/4 cup unsweetened coconut milk (half of the can)
4 large eggs
What To Do
Preheat oven to 350*
In iron 10” skillet, warm coconut oil over medium high heat. Add onion and cook until soft about 3-5 minutes. Stir in broccoli rabe and continue to cook for another 2 minutes. Stir in garlic, caraway seeds, salt, chili flakes and cook until fragrant (3 mins).
Add coconut milk and bring to a simmer. Carefully crack each egg into the green sauce spacing evenly. Transfer pan to oven and bake for 10-12 minutes until egg whites solidify and yolkes are cooked. Serve immediately.
