Want to start posting these on here to keep track of weekly “menus.” This week I have a few events at night but had a few hours Sunday to meal prep. It took me 4 hours to prep:
6 hardboiled eggs
Chia Pudding
Sardine dip (lunch/snack)
Pasta Salad (lunch)
Lemon White Bean Soup (lunch)
Eggplant Moussaka (dinner for Tuesday)
Shrimp and Grits (dinner tonight)
If I run out of food, later in week I’ll make:
Mapo Tofu - made this Friday night
Chicken Enchilada Bake - didn’t make
