Chorizo Sausage Dirty “Rice”
Yum yum yum! Inspiralized does it again. I added my own flare/ingredients I was trying to use up - it’s a forgiving dish. I had carrots to cook, and I was a little nervous it would be too carrot-y but the flavors were hidden within the sweet potatoes. This was the kind of dish that you wake up excited to eat leftovers of (what - you don’t wake up excited to eat?). I had to control myself to not eat it for breakfast. Takes about 30-45 minutes to make depending how fast you cook. Ricing your vegetables is super easy; spiralize them first then pulse in food processor until they represent the size and texture of rice.
Ingredients
- 1 tablespoon extra virgin olive oil
- Whatever kind of sausage you prefer (I used Chorizo for myself and Veggie for Jay)
- 1 red bell pepper, chopped into ½” chunks
- 1 orange bell pepper, chopped into 1/2″ chunks
- 1 medium sweet potatoes, peeled, spiralized, riced
- 3 big carrots, peeled, spiralized, riced
- Few handfuls of kale, chopped thinly
- 2 garlic cloves, minced
- ½ cup chopped onions (I used cooking onions)
- 1 cup vegetable or chicken broth
- 2 tablespoons tomato paste
- 1 can kidney beans, rinsed
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- ½ teaspoon ancho chile powder or regular chili powder
- ¼ teaspoon cayenne pepper
- 1 teaspoon salt, and pepper to taste
What to Do
- Place a large skillet over medium-high heat and add in the olive oil. Once oil heats, add in the sausage and let cook for 10-15 minutes or until sausage is browned
- Meanwhile, spiralize the sweet potato and carrots and place into a food processor and pulse until rice-like and set aside
- Once the meat is browned, transfer to a plate. Add a little more oil if the pan needs it and saute the garlic for 1 minute. Then add the peppers and onions. Let cook for 3-5 minutes then add the tomato paste. Stir for a minute or so until it coats the vegetables.
- Then, add in the kale, sweet potato and carrot “rice,” and spices. Stir to combine and let cook for 1 minute. Then, add the kidney beans and the chicken broth, stir again and let cook, covered, for 5 minutes, uncovering occasionally to stir. Then, add in the sausage and cook for another 2-3 minutes, or until sweet potato rice is cooked through
Spoon into bowls and enjoy!
