Random Bowl of Veggie and Goat Cheese Goodness

When you day drink and don’t make it to the 4th of July BBQ and you have marinated veggies in the fridge intended for kabobs, you come up with this recipe. 

Ingredients for Marinade

½ cup olive oil

½ cup lemon juice

¼ cup water

¼ cup mustard (dijon, tarragon, whatever) or 1 Tbsp dry mustard

2 Tbsp basil 

1 tsp salt, few dashes of pepper

1 tsp oregano

3-4 cloves crushed garlic

¼ cup parsley, minced

Veggies (all halved or cut in chunks)

Zucchini

Cherry Tomatoes

Mushrooms

Onions

Red peppers

For the veggie bowl

Cooked quinoa

Goat cheese

Parsley to garnish

What To Do

Combine ingredients for marinade and pour on veggies. Let marinate in fridge overnight or up to 12 hours (I think mine were in even longer). Heat oven to 400* and roast for 30-45 minutes or until preferred doneness. 

Combine veggies with quinoa and goat cheese. Sprinkle with parsley and some balsamic vinegar. Enjoy!
