Date Breakfast Energy Balls

I like to make a huge batch since they last a while in the freezer. This recipe makes about 45 balls.

Ingredients

2 cup shredded sweetened coconut

4 cups soft Medjool dates, pitted

2 Tbsp coconut oil

6+ Tbsp sunflower butter

6 tsp cacao

1 tsp vanilla extract

a pinch Himalayan sea salt

a pinch cinnamon

a pinch cardamom

1 Tbsp chia seeds

2 cup rolled oats

What To Do

Pulse dates and coconut flakes in food processor until they're small pieces. 

Add rest of the ingredients and pulse until well blended.

Roll into balls and freeze. I like to eat them cold or you can let them thaw.
