Original recipe from here. Use good quality raw honey. I know it’s expensive but it’s ideal to consume honey raw so it’s worth it. I like to double this recipe since I’m going through the effort and dishes so I don’t have to make them for another 2 months. They take about an hour to make.
INGREDIENTS
FOLLICULAR PHASE ENERGY BITES (DAYS 1-14)
3/4 cup + 2 tablespoons ground flaxseed
3/4 cup + 2 tablespoons raw pepitas
2/3 cup toasted shredded coconut (sweetened or unsweetened)
2/3 cup natural peanut butter (or your preferred nut butter)
1/2 cup oats (I like quick cooking)
1/2 cup mini semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey
1 teaspoon real vanilla extract
LUTEAL PHASE ENERGY BITES (DAYS 15-28)
3/4 cup + 2 tablespoons sunflower seeds
3/4 cup + 2 tablespoons sesame seeds
2/3 cup toasted shredded coconut (sweetened or unsweetened)
2/3 cup nut butter (I like sunflower)
1/2 cup oats (I like quick cooking)
1/2 cup mini semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey
1 teaspoon real vanilla extract
INSTRUCTIONS
Combine dry ingredients in a large bowl and dump into food processor. Add the wet ingredients (nut butter, honey, vanilla). Blend to combine. Test a ball in your hand. If it’s crumbly add some more nut butter or honey so they’re easy to roll.
Roll into balls and place in a glass dish or baking sheet with parchment paper and freeze for a few hours. Place them into tupperware and leave in freezer until you’re ready to eat. They take a few minutes to thaw.
