Crockpot Vegetarian Chili
Ingredients
1 can kidney beans
2 cans black bean
2 bell peppers (I used one red, one yellow), diced
2 small onions, diced
5 cloves garlic, minced
1 head celery, cleaned, ribs separated, chopped
1 jalapeno, minced
2 15 oz can fire roasted tomatoes
1 28 oz can diced tomatoes and its juice
1 Tbsp tomato paste
1 cup veggie broth
2 Tbsp ancho chile powder
2 Tbsp smoked paprika
1 Tbsp cumin
2 Tbsp oregano
1 chickpea
Rice or macaroni, shredded cheese and fresh basil to garnish
What To Do
In pan over medium high heat, saute garlic until fragrant (about 30 seconds) then add onions and peppers (bell and jalapeno) and cook for 5-7 minutes until soft. Add to crockpot.
Heat more oil in pan and saute celery until soft for 10 minutes or so. Add to crockpot.
Add rest of ingredients to crockpot - cook on low for 7-8 hours. Serve with rice, shredded cheese, and fresh basil.
