Bagna Cauda

I got this from Gwenyth Paltrow’s book “Goop Clean Beauty.” I’m on Day 2 of the Detox so I felt like I needed something slightly richer than just vegetables, plus I knew Jay wasn’t enthusiastic about having soup again for dinner. So while I was cooking Kimchi Turkey Burgers, I whipped this up in 5 minutes. It satisfied my hunger that always pops up while I’m cooking.

Ingredients

Banga Cauda:

1/4 cup olive oil

1 small can of anchovies (about 4 of the anchovies themselves), drained of oil

1-2 cloves garlic, minced

large pinch red pepper flakes

few grinds fresh pepper

zest and juice of 1/2 lemon

Crudites:

endive, leaves separated

radicchio, cut into large pieces

fennel bulb, cored and cut into pieces

brussel sprouts, separated into individual leaves

What To Do

For bagnua cauda, combine all ingredients except lemon juice in a small saucepan. Cook over medium-low heat for about 3 minutes, constantly stirring until anchovies have melted and garlic is fragrant but not burnt. Add lemon zest and juice and taste for seasoning.

Transfer warm dip to bowl and serve with crudites.
