Stir fried Celery with Ground Pork + Bok Choy with Vinegar
This was a fabulous recipe - easy and delicious. Probably not the healthiest, but it’s probably much healthier than if you were to get sichuan takeout.
Celery + Pork
Ingredients
10 oz celery
3 tbsp cooking oil
3.5 oz ground pork
1.5 tbsp sichuan chile bean paste
1.5 tbsp finely chopped ginger
1 tsp light soy sauce
1 tsp chinkiang vinegar
1/4 tsp ground roasted sichuan pepper
1 tbsp chile oil
What To Do
Remove strings from celery and cut into long strips then finely chop.
Heat cooking oil in seasoned wok over high heat. Add pork and stirfry until pale, breaking meat Into tiny morsels as it cooks. Add chile bean paste and continue to stirfry until oil is reda nd fragrant, then tip in ginger and stirfry until it smells wonderful. Add celery and continue to stirfry until hot, adding soy sauce as you go. Add vinegar and give it a lick of heat.
Finally stir in sichuan pepper and chile oil and serve.
Bok Choy
Ingredients
10 oz baby bok choy (I used 6)
Dipping sauce:
2 tbsp light soy sauce
1 tsp chinkian vinegar
1 tbsp finely chopped garlic
2 tsp ground chiles
1/4 tsp ground roasted sichuan pepper
What to do:
Rinse bok choy then cut longways in half. You can leave base intact. Steam for about 2 minutes then let drain in a colander.
Combine ingredients for sauce in small bowl.
Dip vegetables in sauce or spoon on top. It’s pretty salty and spicy so use sparingly.
