Ian's Dandelion and Leek Pizza

I used pre-bought pizza store dough - made everything a lot easier.

For pizza:

1 tbsp butter

1 large leek, white and pale green parts washed and sliced

1 tbsp all purpose flour

1 cup whole milk

10 oz dandelion greens, tough stems discarded

1 tbsp extra-virgin olive oil

Few large eggs

hot sauce

What To Do

Melt butter in heavy skillet over medium heat. Add leeek and cook, stirring frequently, until it’s wilted but not browned, about 5 minutes. Stir in the tbsp of flour. Whisk in milk and 1/2 tsp each salt and pepper. Bring to a boil, whisking constantly, and cook until thickened, about 2 minutes. Turn off heat and let sauce cool.

Bring pot of salted water to boil. Cut dandelions into 3-inch lengths, then blanch until bright green, about 3 mins. Drain, toss with oil and 1/2 tsp each salt and pepper and set aside.

Preheat your pizza grill. Roll out dough, spread leek sauce evenly over it. Next time try to bake like this then broil the eggs. The eggs were difficult in the pizza oven. Scatter dandelions over pizza and form 6 shallow nests. Crack an egg into each nest and season with salt and pepper. Broil 2 inches from heat until eggs are set but still have runny yolks, about 4 mins. Transfer pizza to cutting board and serve.
