Homemade Hummus & Lemony Herb Chermoula
Take your hummus to the next level - it’s all about Bon Appetit’s Chermoula (my version below). I tried making their fancy hummus with dried chickpeas and honestly, it’s way easier and less time consuming to use a can.
Hummus
Ingredients
1 15½-oz. can organic chickpeas, rinsed
Juice of 1 large lemon (or 2 small limes if you’re out like I was!)
2-3 garlic clove (depending on your love for the stuff)
½ cup tahini, well mixed (I liked Sprouts roasted garlic)
¾ tsp. (or more) kosher salt
1/2 tsp. ground cumin
Pinch cayenne
3 Tbsp. extra-virgin olive oil
3 Tbsp water
What To Do
Combine citrust juice, tahini, garlic, salt, cumin, cayenne and blend In food processor until well mixed. Add chickpeas and continue to mix, with blender on add olive oil slowly then water. Process until desired consistency.
Chermoula
INGREDIENTS
1 cup coarsely chopped fresh cilantro
1 cup coarsely chopped fresh parsley
2 teaspoons finely grated lemon zest
3 tablespoons fresh lemon juice
1 cup vegetable oil
1 garlic clove, finely grated
1 teaspoon ground cumin
Kosher salt
What To Do
Pulse cilantro, parsley, and lemon juice in a food processor to a coarse paste. Add oil, garlic, lemon zest, and cumin and pulse just to combine; season with salt.
Drizzle a Tbsp or so on top of hummus and enjoy!
