This could be subtitled as “The Salad to Make You Forget You’re Eating a Salad.” I got the original recipe from here but changed a few things. I’m always looking for new ways to dress up kale and this creamy peanut butter dressing makes me want to eat this salad for days. It’s good without any protein in it but you could easily add some chicken, mandarin oranges, and those little Asian fried noodle crouton things. I doubled the original dressing recipe but use your judgement when putting it on the salad. You can always save some for the next salad.
Ingredients for salad
- 2 big bunches of kale
- a bag of shredded cabbage
- a bag of shredded carrots
- 3 red peppers, thinly sliced
- ½-1 cup chopped fresh cilantro
Ingredients for dressing
- 6 tablespoons creamy peanut butter
- 4 tablespoons unseasoned rice vinegar
- 2 tablespoons apple cider vinegar (because I ran out of rice vinegar)
- Juice from one lime
- 3 tablespoons avocado oil (or any oil you have)
- 2 tablespoon soy sauce
- 6 tablespoons honey
- a few cloves of garlic, minced
- 1-inch square piece fresh ginger, peeled and grated
- 1 ½ teaspoon salt
- 1 teaspoon sriracha
- 1 teaspoon Asian sesame oil
What To Do
Combine all salad ingredients in large bowl.
Combine all dressing ingredients in nutribullet or blender and process until smooth.
Combine all and enjoy.
