Detox Greek Salad

I went away to the Caribbean for a week. I came back with a tan and a stomach full of meat, bread, and croissants. I devoured this salad. Detox or not it takes 15 minutes to put together and gives you all the feels. 

Ingredients for Dressing

¼ cup red wine vinegar

1 tsp dijon mustard

1 tsp oregano

1 lemon, juiced

2 cloves garlic minced

1 tsp salt

generous amount ground pepper

½ cup + olive oil

What To Do

Whisk together vinegar and mustard then the rest of the ingredients except the olive oil. Lastly whisk in olive oil. 

Salad Ingredients

2 hot house cucumbers, chopped

2 bags spinach or romaine lettuce (chop romaince, leave spinach as is), washed

2 Roasted red peppers from jar

½ block of feta cheese

4 plum tomatoes, chopped

2 red onions, chopped

As many pickled banana peppers as you like

Marinated artichoke hearts (if you have them), chopped

¼ - ½ cup fresh Dill, minced

1-2 breasts grilled chicken (optional)

What To Do

Combine all ingredients with some of the dressing (I used about half and saved the rest). Enjoy!

Asian Kale Salad
