Greek Zucchini “Orzo” Salad

Orzo + veggies + greek dressing = YUM

Ingredients

Salad

  • Container of cherry tomatoes, cut in half

  • 2 zucchinis, spiralized

  • 4 oz feta, crumbled

  • 4 rtichoke hearts, chopped

  • 4 cups spinach, chopped

  • 2 small red onions, diced

  • 1 roasted red pepper, chopped

  • ¼ cup dill, finely chopped

  • Salt, pepper, oregano, greek seasoning if you have it

  • Greek dressing (recipe below)

Dressing

¼ cup red wine vinegar

1 tsp dijon mustard

1 tsp oregano

1 lemon, juiced

2 cloves garlic minced

1 tsp salt

generous amount ground pepper

½ cup + olive oil

What To Do

Whisk together vinegar and mustard then the rest of the ingredients except the olive oil. Lastly whisk in olive oil.  Combine the rest of the ingredients in a large bowl.
